This, the largest Pasture restaurant to date, seats 180 in its main dining room and boasts the UK's biggest glass-fronted dry-aging fridge, showcasing the commitment to in-house butchery. Beef is sourced from local farms raising grass-fed cattle, then dry-aged for a minimum of 35 days and cooked over charcoal and wild cherry wood for extra flavour. The theatrical open kitchen allows diners to view the fire-based cooking, a signature of the Pasture experience. While steak is undoubtedly the star, with various cuts from ribeye to tomahawk, the menu also features creative starters like char siu pork belly and crab toast, alongside standout sides such as praised cauliflower gratin.
Located at 15 Colmore Row, Pasture occupies a former bank building, transformed into a stylish venue with a Manhattan-esque bar perfect for after-work drinks or pre-dinner cocktails. The restaurant aims for a "sense of place," engaging with local suppliers for its menu and interiors.
